It works out great and I love it, but the series has yet to touch the cultural nerve that it would need to be popular and I don't think it will in the current anime/manga climate. Fleki (the crow girl) is a thief and black market dealer with a specialization on dungeon artefacts, coming from a noble family once. One day the villagers heard moans coming from the mausoleum. While I don't think there's anything necessarily wrong with any of the anime/manga I mentioned, Dungeon Meshi seems to be somewhere in the middle: It's a little more methodical and world-heavy like the first two, the food and cooking are amazing but doesn't carry much popular appeal, and the fantasy vibe seems more classic D&D than modern escapist fantasy and doesn't contain much fan service. Isekai and Fantasy have been really hot recently, but a lot of the well known ones are very action/comedy oriented and contain a decent amount of fan service (Re:zero, Reincarnated as a Slime, and Shield Hero come to mind). The slower pace and focus on the environment remind me a lot of Yuru camp and Girl's Last Tour, neither of which became very popular despite having a decent following. Dungeon Meshi has a lot of material for a fun ride. This is all my opinion, so please take it with a grain of salt: I think it is the things that make Dungeon Meshi great that also keep it from being very popular.
